Pumpkin Jackfruit Curry

Serves : 4
Ingredients:
3 cup water
2 ¼ cup young green Jackfruit, tough core removed, cut into medium-sized pieces
2 cup pumpkin, cubed
1 pack (180g) vegan meat curry sauce
1 medium red onion, finely sliced
4 garlic cloves, finely diced
Method:
1) Bring water to boil. Add Jackfruit into the pot and let it cook for 10 minutes. Remove Jackfruit from the pot and place it in a bowl.
2) Add garlic, onion, half of the pumpkin (1 cup) in and cook for about 5-10 minutes until pumpkin softens. Lightly mash pumpkin with a fork until it forms puree-like mixture.
3) Add in the rest of the pumpkin and let cook for about 5 minutes. Make sure however that it does not completely soften. (You may add more water if needed.)
4) Lastly, add in the vegan curry sauce and jackfruit into the mixture. Mix evenly.
5) Remove from stove and garnish with organic basil if desired.
6) Serve over brown rice or enjoy on its own!
