Cabbage Manchurian, Veggie Snack

If you are a cracker or tempura lover, you must not miss this dish called “Cabbage Manchurian”. It has a crispy texture but it does not cause dryness in your mouth. This is an ideal treat for children who dislike their vegetables. Its crispiness, flavour and bright golden appearance can open the children's appetite. The dish can even be dipped into a variety of sauces such as tomato, mayonnaise, chilli etc.

Compared to other snacks, this Cabbage Manchurian is definitely a healthy one. The sweetness of the vegetables still remains even after they are fried. Cabbage contains sulphur, lime and iron, which can help cleanse the body, build muscles, provide relief for fracture cases, acidosis and even ulcer. Prepare one now.


Portion: Serves 3 – 4 people

Ingredients

Fried Manchurian
Half cabbage (medium-sized), finely sliced
6 cloves of garlic, finely chopped.
2 medium-sized carrots, finely grated
1 large onion, finely chopped.
7 Tbsp of plain flour
2 tsp of baking powder
8 - 10 Tbsp of water
A pinch of ground pepper and salt to taste
Oil (to deep fry)


Ginger Sauce
2 Tbsp of oil
1 ½ Tbsp of finely chopped ginger
1 Tbsp of finely chopped garlic
1 Tbsp soy sauce
1 Tbsp corn flour
1 tsp of Sugar
1 cup of vegetable stock
A pinch of ground pepper and salt to taste.


Method:

Preparing the Fried Manchurian
  1. Prepare a mixing bowl. Put the cabbage, carrot, onion, garlic, plain flour, baking powder, salt and ground pepper into it.
  2. Gradually put the water into the mixture and mix well, the texture should not be too watery. The mixture has to be slightly sticky in form.
  3. Prepare a deep frying pan and heat some oil enough to cover the fried Manchurian. Use two spoons to form a ball-like shape and directly put into the heated oil for frying. Deep-fry each until it turns golden. Remove and place it on an oil-absorbent tissue.


Preparing the Ginger Sauce
  1. Place a sauce pan on the stove. Heat the oil over a small flame. Then, fry ginger and garlic  for 5 seconds or until aroma arises. 
  2. Put in the vegetable stock, soy sauce, sugar, salt and pepper to taste. 
  3. Mix the corn flour with some water and pour it into the sauce once the mixture begins to boil (below boiling point). 
  4. Boil for a few seconds and the dish is now ready to be served.

NOTE: There are two ways of serving - you can either mix the sauce together with the fried Manchurian or serve them separately.
